Here at Element Eden we're excited to welcome the new season with something that will keep you staying nice and cosy!

We've been inspired by the beginnings of some cooler climates to make a great winter warmer which is bound to make you

feel all warm and fuzzy inside, and nothing beats homemade chai.

Chai tea is loaded with antioxidants and can promote healthy digestion, and plus your house will be filled with an

aroma of chai goodness. Follow these simple steps and you'll be on your way to chai heaven!

| Chai makes 6 cups |

What you will need:

• 3 cups of water
• 3 cups of preferred milk
• 10 to 14 cardamon pods, crushed to open the pods
• 6 - 12 whole cloves
• 6 to 12 white peppercorns
• 2 cinnamon sticks
• a small piece of ginger, peeled (optional)
• 1 vanilla bean, sliced in half (optional)
• 2 tablespoons of black tea
• 2 to 3 tablespoons of honey

1. Place water in large pot. Add cardamom pods, cloves, white peppercorns, cinnamon sticks, ginger and vanilla bean (if using).
Bring to a boil, then simmer for 20 minutes.
2. Add tea, bring to a boil again and simmer for 8 to 10 minutes.
3. Add milk and gently simmer on medium high for about 5 minutes.
4. Strain mixture into a heat proof bowl. Add honey to taste, pour yourself a cup, place a cinnamon stick and a couple of aniseed
stars in and enjoy!
5. The chai will keep for 2 to 3 days but is best enjoyed immediately and will probably be long gone before the second day.
