Happy Anzac Day!

Today at Element Eden, we pay our respects on this special occasion of national remembrance day to recognise and acknowledge the lives of our beloved soldiers at war.

In celebration of this momentous day, we thought we’d take some time and bake some old fashion Anzac biscuits, with a bit of a health twist!

With a few simple steps and ingredients, soon enough you’ll have yourself some of the tastiest biscuits you’ve ever laid your eyes on!

These healthy treats will serve best with a heart warming cup of tea and a really good book.

What you will need:

• 2 cups almond meal
• 2 cups flaked almonds
• 2 cups flaked coconut
• 1 cup of rolled oats
• 1/2 cup honey
• 1/2 cup coconut oil
• 1tsp bicarbonate soda
• 1/4 cup coconut milk


Preheat oven to 160 degrees. Line a baking tray with baking paper

Place the almond meal, almonds and coconut in a bowl and mix well to combine. Place the honey and coconut oil into a small saucepan over low heat and cook, stirring occasionally, until melted. Add the bicarbonate of soda and stir well until dissolved.

Pour honey liquid and coconut milk into the dry ingredients and stir until well combined.

Firmly roll mixture into small palm-sized balls, place on baking tray and flatten slightly. Bake for 15-20 minutes or until golden.

The biscuits will be very soft when they come out of the oven, so allow them to cool for at least 5 minutes on the baking tray before transferring to a cool rack to harden.
