EDEN EATS - PINEAPPLE & COCONUT POPSICLES BY ANNA ONEA

Inspired by our tropical pineapple print featured on our pineapple pant, pineapple crush top & Pinacolada Bag, fruit enthusiast Anna Onea created a gluten free, dairy free, vegan, raw recipe to share with you all!

Perfect for hot days, these delicious guilt free popsicles are so easy to make! Just follow these simple steps:

INGREDIENTS
• The flesh and water of one young Thai coconut (you can use just canned coconut cream but fresh is best!)
• 1/2 ripe chopped pineapple
• frozen blueberries
• 1 scraped vanilla bean (use 1 tsp vanilla essence if you don't have the bean)
• Medjool dates or your choice of sweetener, to taste
• Fresh herbs (eg rosemary, basil, oregano, mint. Optional)
• Icy-pole moulds


METHOD

1. Loosely fill (approx. half the volume) the icy-pole moulds with chopped pineapple, a couple of frozen blueberries, and your choice of fresh herbs (optional) so that the mould looks full but still has plenty of room for liquid
2. In a food processor, blend the coconut water and flesh until smooth (if you're using canned, skip this step) add the vanilla, dates/sweetener and any remaining pineapple
3. Fill the moulds with the mixture and freeze overnight
